Season Fruits: Strawberry Cake

The wonderful thing about season fruits & vegetables is that they come just once in a while. Sure you can buy them all year round in most supermarkets, but those just don’t taste the same. You may think that the fact that season fruits are rare is exactly what makes them imperfect. But the truth is, if we had them all the time, would be really appreciate their taste as much as we do since we get them once in a while? Would we still wait nervously for Christmas if it was every month…? I think you get my point. So as strawberries, cherries and all other berries grow to our delight, I feel summer is near & celebrate it with a cake.

Ingredients:

* 6 tablespoons of unsalted butter, softened
* 1 & 1/2 cups of all-purpose flour
* 1 & 1/2 teaspoons of baking powder
* 1/2 teaspoon of salt
* 1 cup & 2 tablespoons of sugar
* 1 large egg
* 1/2 cup of milk
* 1 teaspoon of pure vanilla extract
* 1 pound of strawberries, hulled and halved

Recipe:

  1. Preheat oven to 175 °C (350 F) & butter a 10-inch pie plate.
  2. Sift flour, baking powder, and salt together into a medium bowl.
  3. Put butter and 1 cup of sugar in a separate bowl. Mix on medium-high speed until pale and fluffy. 
  4. Reduce speed to medium-low; mix in egg, milk, and vanilla.
  5. Reduce speed to low; gradually mix in flour mixture.
  6. Move the batter to the buttered pie plate. Arrange strawberries on top of the batter, cut sides down and as close together as possible. Sprinkle a bit of sugar over berries.
  7. Bake 10 minutes, then reduce oven temperature to around 160 °C (325 F). Bake until cake is golden brown and firm to the touch, about 1 hour.

* 6 łyżek masła, zmiękczonego
* 1 i 1/2 szklanki mąki 
* 1 i 1/2 łyżeczki proszku do pieczenia
* 1/2 łyżeczki soli
* 1 szklanka i 2 łyżki cukru
* 1 duże jajko
* 1/2 szklanki mleka
* 1 łyżeczka czystego ekstraktu z wanilii
* 0,5 kg truskawek, obranych i przekrojonych na pół

Sposób przygotowania:

1. Rozgrzej piekarnik do 175 ° C i nasmaruj blachę/foremkę masłem. 
2. Do średniej wielkości miski przesiej razem mąkę, proszek do pieczenia i sól.
3. Umieść masło i 1 szklankę cukru do osobnej miski i miksuj z prędkością średnio-wysoką, aż masa stanie się jasna i puszysta.
4. Zmniejsz prędkość do średnio-niskiej. Dodaj jajka, mleko i wanilię.
5. Zmniejsz ponownie prędkość do niskiego poziomu i dodawaj stopniowo mąkę do masy.
6. Przenieś ciasto do natłuszczonej foremki. Ułóż truskawki na wierzchu ciasta, węwnętrzną stroną w dół i tak blisko siebie, jak to możliwe. Posyp wierzch dwoma łyżkami cukru.
7. Piecz 10 minut, następnie zmniejsz temperaturę do około 160 ° C. Piecz aż ciasto zrobi się złociste i twarde w dotyku, czyli około 1 godziny.

  1. MmM! Strawberry cake?! I’ve never actually seen a recipe for that! looks so delicious and no harder to make than an apple cake! this one must be tried out!
