Tomato & Olives Rice Dish

The tomato & olive rice recipe is a very soft and tasty dish. All the flavor comes from the ingredients, not the spices, which is what I absolutely love about it! There’s even no necessity of using salt! Plus it can be easily modified in many ways, also being a vegan dish just by eliminating the chicken stock, and adding water instead. Perfect for the whole family!

What you’ll need:

3 big tomatoes, cut in cubes
1 tablespoon tomato paste
4 cups chicken stock (+ preferably pieces of chicken breast)
2 teaspoons olive oil
2 red onions, sliced
1 clove garlic, crushed
1 1/4 cups of rice
1/2 cup of olives, halved

Recipe:

1. In a saucepan over medium heat, cook tomatoes, chicken stock and tomato paste. Bring to a simmer and reduce to a low heat.
2. In a heavy-based frying pan, heat oil and add onions. Cook 1-2 min or until soft.
3. Add garlic & cook for another minute.
4. Add rice to pan, stir in well.
5. Add tomato mix, 1 cup at a time until absorbed, stirring continuously.
6. With the last cup of tomato mix, add olives.
7. Season with black pepper and garnish with fresh basil.

Składniki:

3 duże pomidory
1 łyżka koncentratu pomidorowego
4 szklanki bulionu z kurczaka
2 łyżeczki oliwy z oliwek
2 czerwone cebule, pokrojone
1 ząbek czosnku, zmiażdżony
1 1/4 szklanki ryżu
1/2 szklanki oliwek bez pestek, przekrojonych na pół

Przepis:

1. W rondlu na średnim ogniu, gotuj pomidory, bulion z kurczaka i koncentrat pomidorowy. Doprowadź do wrzenia i zmniejsz na mały ognień.
2. Na głebokiej patelni rozgrzej olej i dodaj cebulę. Smaż 1-2 min lub do momentu aż cebula stanie się miękka.
3. Dodaj czosnek i gotuj jeszcze przez minutę.
4. Dodaj ryż i dobrze wszystko zamieszaj.
5. Dodaj mieszankę pomidorową, po jednej szklance na raz aż do wchłonięcia. Ciągle mieszaj.
6. Z ostatnią filiżanką mieszanki pomidorowej, dodaj oliwki.
7. Przypraw czarnym pieprzem i udekoruj świeżą bazylią.

    • I also am reducing meat from my diet and eat it only occasionally, so it’s very important to me that the meals can be served both with meat (for the rest of the family or guests) as well as without it. This recipe is easy, quick and really good so I highly recommend trying it!🙂

    • Try this! It’s so simple. And I agree, raw olives are much more tasty. That’s why they are added at the very end so they remain raw🙂.
