Healthy Breakfast Muffins Recipe

For the past few days I’ve been trying to find the perfect muffin recipe, which means I’ve done quite a lot of baking. I’m still on my search for the best muffin treat. However the one’s I present in this post are worth attention. I wouldn’t necessarily call them a dessert, but they could definitely make an ideal base to your breakfast. Further more, they’re pretty healthy. Low in sugar and fat, and rich in fruits. Perfect for the whole family!

Ingredients

1 & 1/4 cups all-purpose flour
1/2 cup dark-brown sugar
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon coarse salt
1 cup rolled oats
1/2 cup raisins
3 tablespoons extra-virgin olive oil
1 large egg
1/3 cup milk
4 medium carrots, shredded
1 medium ripe banana, mashed

Note: I also added orange pulp that was a leftover from a freshly squeezed orange juice, and mixed all-purpose flour with integral flour in proportions 4:1.

Recipe

1) Preheat oven to 400 degrees.

2) In a large bowl, whisk together flour, brown sugar, baking soda, nutmeg, and salt.

imageimage3) Add oats and raisins. Mix all together.image4) Smash the banana and shred the carrots.

imageimage5) Add oil, egg, milk, carrots, and banana and stir until blended.imageimage

6) Fill each muffin cup with 3/4 cup batter.

7) Bake around 25 minutes or until a toothpick inserted in center of a muffin comes out clean.

This recipe makes 12-16 cupcakes. Time of preparation is around 15 minutes.

Składniki

1 1/4 szklanki mąki 
1/2 szklanki brązowego cukru
1/2 łyżeczki sody
1/2 łyżeczki mielonej gałki muszkatołowej
1/2 łyżeczki soli gruboziarnistej
1 szklanka płatków owsianych
1/2 szklanki rodzynek
3 łyżek oliwy z oliwek z pierwszego tłoczenia
1 duże jajko
1/3 szklanki mleka
4 średnie, starte marchewki
1 średni, dojrzały, zmiażdzony banan

Przepis

1) Rozgrzej piekarnik do 400 stopni. W dużej misce wymieszaj mąkę, brązowy cukier, sodę, gałką muszkatołową i sól. Dodaj płatki z owsa i rodzynki. Połącz wszystko z olejem, jajkiem, mlekiem, marchewką, bananem i dobrze wymieszaj.

2) Przygotuj foremki i wypełnij je ciastem do ok. 2/3 wysokości. Piecz ok. 25 minut lub do czasu, aż wykałaczka włożona w środek muffinki wychodzi czysta. SMACZNEGO!
