Baby Suitable Integral Cookies

I’ve found a simple recipe for crunchy cookies (I love baking cookies, don’t know why exactly) which I modified to make it as healthy as possible so that they can be eaten even by babies (I’m more than sure that these home-made cookies will be much healthier than the bought one’s made specially for babies!). The original recipe contains:

50 g of butter

170 g of all-purpose flour

2 spoons of lemon juice

1 egg

60 g of sugar

1 spoon of lemon skin

a touch of baking powder

sugar powder to decorate

What I did is use mostly integral flour, adding just a bit of all-purpose flour, in proportion more or less 130 g / 40 g, and reduced the amount of sugar to about 50 g (that’s not much of a change, I know, but it’s always something) using only brown sugar. I also added a lime instead of a lemon, and eliminated the baking powder (as a substitute I used beaten egg white).

To make it easier to use this recipe while baking, here are the modified ingredients once again in a row:

50 g of butter

130 g of integral flour

40 g of all-purpose flour

2 spoons of lime juice

1 egg

50 g of brown sugar

1 spoon of grated lime rind

castor sugar to decorate

How to get started:

1. First rub the butter with the sugar and grated lemon rind in a bowl until smooth.

2. Beat the egg white and add it to the mixture, then add yolk and lime juice and continue rubbing.

3. In a separate bowl, sift the integral and all-purpose flour and mix it with the mixture from the first bowl. Knead the dough (if it is too dry add a few drops of milk).

4. Preheated oven at 160 degrees C.

5. From the dough form small, thin cookies and place them on a sheet of parchment or greased pan.

6. Bake around 15 minutes (it took me 10 minutes, so better keep checking your cookies as they bake).

7. Before serving decorate with castor sugar.

 

Preparation time is about 20 minutes, so the first set of cookies is ready in around half hour.
